I once read in a book that chocolate is what most of turn to when we’re stressed out, depressed or in a foul mood. It seems that there’s something about chocolate that soothes our senses when we aren’t up to par. We reach for chocolate candy, cookies, cake or even beverages whenever things get to be too much! For dieters, it’s very hard to enjoy chocolate because chocolate is high in fat. But when dieters feel they’ve “behaved” and “deserve it”, they reach for chocolate! I’m passing along a recipe for a brownie that’s sweet, rich, satisfying and guaranteed to destroy a diet single handedly: “Death to the Diet Brownies.” These brownies are full of chocolate, butter, pecans, and marshmallows, so you can see that though these are definitely not low-calorie, they are very satisfying and simply divine! Yet, they’re worth the calories now and then. To begin with, you start by melting unsweetened chocolate and let it cool. Then, you cream butter, sugar and vanilla extract. In go eggs, then the melted chocolate. Dry ingredients including flour, salt and baking powder are combined and added to the creamed mixture. Finally, you stir in chopped pecans. This goes into a 10×15 inch pan. Meantime, you beat egg whites and sugar to make a stiff meringue. Then you add vanilla extract and fold in miniature marshmallows. This goes over the brownie batter in the pan and bakes at 325 degrees for 45 minutes until meringue is a delicate brown. When cooled, these are cut into squares. Now, kiss your diet good-bye! This makes a large amount of brownies so if you’re planning a gathering in the near future, these would be just what you need! The pan size called for in the recipe is a 10x15x2 inch pan, which is about the size of a jelly roll pan. Make sure to grease and flour your pan well before starting this recipe or you could also use cookware spray, if you wanted to. Regardless of which method you use, make sure you do prepare the pan as brownies will stick otherwise. If you’re dieting, take a little break and indulge in these treats…and that’ll be our secret! “DEATH-TO-THE-DIET” BROWNIES Preheat oven to 325 degrees. Grease a 10x15x3 inch baking pan and set aside. Melt the chocolate and set aside to cool. Cream the butter with the sugar until fluffy. Add the vanilla extract and the eggs. Stir in the cooled chocolate. Sift together the dry ingredients together and gradually add to the creamed mixture. Stir in the pecans. Turn into the prepared pan. Meringue Topping: Beat the egg whites until stiff but not dry. Gradually beat in the sugar by the tablespoons until a stiff meringue forms. Blend in the vanilla extract and fold in the miniature marshmallows. Spread over the brownie batter. Bake for about 45 minutes or until meringue is a delicate golden brown. Let cool, then run a sharp knife around the sides of the pan to loosen. Yield: about 3 dozen brownies, according to the size.
